How to keep brown sauce after you make it.

A brown sauce can last for up to 2 weeks in your fridge. If I know I have a couple meals coming up where I can use it all up, I will just put it in a plastic container and lay a sheet of plastic wrap right on top of the sauce. This prevents crusting, which kind of just wastes the product.

Now if I don't have plans to use it, I will freeze it too. Often I do this in big chucks by lining the compartments of a serving dish with plastic wrap, then pouring the brown sauce into the sections. Cover, freeze, then I pull the tray out of the freezer and remove the frozen chunks of brown sauce. Then I just simply re-wrap tightly and stack the chunks of frozen sauce back in the freezer.

You can use those for probably up to 6 months, by just taking them out when needed and putting in a sauce pan over low heat. That's it.
